Visheti = sweet diamonds ;)
Serves 4
Ingredients
Visheti:
1 cup of flour (white)
1 table spoon ghee (cow shortening) or vegetable shortening
1/3 cup regular milk
Cardamom
2 to 3 pinches of nut meg
1/2 cup of powdered sugar
Hard Sugar Coating/Syrup:
2 Cups water
1 Cup sugar
1 Pinch saffron
Directions
Heat oil to boil at the same time heat milk to lukewarm, then add and stir the flour (into boiling oil) then add warm milk. Mix in the two or three pinches of hut meg & cardamom. Take out the dough and keep in warm place for 10 minutes. Knead and roll the dough like snake and cut at angles to form diamonds about 1 to 11/2 inches.
In a deep pan bring vegetable shortening or vegetable oil to a boil then add a handful of the diamonds into the oil and fry until golden brown.
Remove from boiling oil with sieving spoon and put on paper towel to drain excess oil.
For the 'hard sugar coating', start by heating the 2 cups of water, add 1 cup of sugar and the pinch of saffron. Stir until the sugar completely dissolves, increase the heat gently to medium low and allow to boil until the froth disappears (the bubbles in the froth represent unwanted water)
Dump the cooled dry 'visheti' in warm syrup stirring with wooden spatula "CAUTION" syrup is HOT and WILL BURN YOU if it falls on any part of your body!. Stir until the whole batch of 'visheti' are covered up. Then take them out and spread them on a backing sheet or tray to dry out.
Before the 'visheti' are completely cooled down, you can dust them with the powdered sugar.
Serving Instructions:
Visheti is something we make as Americans and others make cookies. They stay in an air tight jar and are served when there are guests together with 'kahawa' or Arabic coffee (served without sugar or milk and in small shot cups)
